Meatloaf

We attempted making meatloaf for the first time and it was actually really good. We never had it before so it was two firsts.  This is how we made it but adding onion would be good to, we just didn’t have any to add.  Also, it freezes well.

2 eggs
2/3 c. Milk
1 tsp. Salt
1/4 tsp. Pepper
3 slices fresh bread crumbled
1/2 c. Shredded Carrot
1 c.  Shredded cheddar cheese
1.5lb Lean ground beef*can substitute with crumbled soda crackers*

Sauce
1/4 c. Brown Sugar
1/4 c. Ketchup
1 tbsp. Mustard

  1. Beat eggs, milk, salt, pepper, and bread with a fork until the bread disintegrates.
  2. Add onion, carrot, cheese, and beef. Mix well and pack in a loaf pan.
  3. Combine brown sugar, mustard, and ketchup and spread over the loaf.
  4. Bake at 350 for approx. 1.5 hours.  Let stand for 10 min.  Serve hot or cold.
